You will work in partnership with our Head of Departments to ensure our roles are filled in a timely manner. As well as attracting candidates, you will screen and manage the recruitment process from end to end, ensuring a great candidate experience all the way through to on-boarding.

  • Manage the end-to-end recruitment cycle for all candidates

The Switchboard Operator will be responsible for answering internal and external telephone calls in a polite, friendly and efficient manner and dealing with all enquiries and requests in a prompt and appropriate manner in line with hotel standards and procedures.

Key Responsibilities

The preparation and cooking of all food cooked on their section in accordance with agreed recipes and processes.

  • Have basic knowledge of all the following basic cooking techniques
  • Grilling – Shallow frying – Deep frying – Baking – Roasting – Boiling/Simmering – Steaming – Braising – Pot Roasting – Poaching – Sautéing – Broiling – Blanching – Stewing
  • To be familiar with all recipes that need to be prepared in your section
  • Follow instructions from senior chefs
  • Ensure correct portion control and plating standards are adhered to
  • Ensure your section is always clean and tidy including fridges and work tops with all containers clean and appropriately covered 
  • Ensure that all equipment / utensils in the section are correctly handled and maintained liaising with the Maintenance department where necessary
  • Report anything that is needed to the kitchen porters to clean or sort out (spillages, empty the bins, top up the blue paper and soap in the hand sinks, remove any boxes for the kitchen)
  • Ensure that all labels are clearly written with a suitable date, on each prepared food item

  • A Floor Housekeeping Supervisor is responsible for maintaining guestrooms, working areas, and the hotel premises in general in a clean and orderly manner, maintaining operating standards.

Overall Objective

The role of the Sales Coordinator is an important role in the St Ermin’s Hotel.   The  Sales Coordinator is responsible for the administrative support strategy of the Sales & Marketing team.

The Sales Coordinator will be responsible for meeting and setting of administrative processes and procedures for the effective support of key personnel in the team including but not limited to those set out below.

  • Administrative support for Corporate Sales Managers and the Director of Sales/Director of Sales & Marketing.
  • Completing RFP’s through online systems including MARRFP/Lanyon, including renegotiations.
  • Management of RFP tracker, communication updates to reservations & accurate rate loading, preparing rate agreements.
  • Competitor rate calls, research on local business for potential sales leads.
  • Communication with sales staff to ensure weekly and monthly reports are completed within agreed deadlines.
  • Compiling accurate account production & arrival reports for the DOS & Corporate Sales Managers. 
  • Assisting Corporate Sales Managers with Account management where necessary including cold calling and prospecting new accounts.
  • Organisation & logistics for the sales team at industry exhibitions, eg – Business Travel Show, Marriott Tradeshows, and Local Sales Blitz’s. 
  • Liaising with hotel reservations and revenue management managers to book rooms for VIP corporate and agency clients.
  • Management of travel agency bedbanks and contra-agreements.
  • Trouble shooting, particularly difficult client queries or complaints.
  • Manage all arrangements for familiarisation trips and office visits.
  • All other reasonable requests from St Ermin’s Management.

Key Responsibilities

As a Host/Hostess you will be the first point of contact for all guests visiting our restaurant and will ensure that each and every one of them has a breath-taking experience.
You will ensure that all tables are consistently laid out and that the restaurant is represented in the best condition possible. You will assign the guest to a suitable table for their needs, providing them with the menu. You will Inform guest about the hotel, in house features and specialties and it’s important that you are knowledgeable about the food & drinks menu and be able to make confident recommendations to our guests.

  • Follow host/hostess opening and closing checklist thoroughly
  • Assign stations to servers, assign side work following side work schedules.
  • Maintain guest flow charts to track number of guests to each station and to track volume per hour
  • Manage all booking reservation systems and follow up any queries with guests
  • Ensure that the entrance to the restaurant has someone there to always greet guests
  • Ensure that the front of the restaurant is always spotless

  • Schedule servers for breaks, etc. in conjunction with the supervisor and depending on the business volumes.

Key Responsibilities

To balance the revenue between Opera and the other systems to ensure all revenue and payment information has been transferred correctly, to transfer all AR invoices to the Accounts receivable system and issue invoices and chase payments.
Promotes the desired work culture around our exacting Customer Service Standards.
  • Prepare Daily revenue report from Opera end of day reports and pass to the assistant financial controller for verification, once verified post the revenue and payments journal into the accounting system.
  • Prepare Cash reconciliation daily and reconcile forex and petty cash
  • Check management bills/ officers checks
  • Reconcile Conference and Banqueting Revenue with daily functions sheets
  • Reconcile Laundry Income
  • Check paid outs
  • Check no shows have been charged
  • Daily transfer of invoices from opera front office to Opera accounts receivable
  • Check invoices are correct and match backup for rates, room nights etc
  • Create Clients Statements from Opera and send them out.
  • Process payments from our bank account or by cheque on the various accounts on the A/R system including credit card payments
  • Liaise with contacts for all accounts to ensure they have received all invoices and there are no queries (for some clients we have to upload invoices to a web portal electronically such as Expedia)
  • Work with the meeting and events team to ensure banquet & catering invoices are sent out in a timely manner and any queries are dealt with efficiently
  • Attend to Open Folios Meeting with Front Office, Reservation and Sales Department
Health & Safety
  • Ensure you are aware of your Health & Safety responsibilities as required by the hotel’s Health and Safety policy and monitor compliance with procedural requirements.
  • To be fully conversant with and abide by all rules concerning Fire, Health & Safety and attend all relevant, statutory training
