It’s Honey Month

We're celebrating our new honey harvest and, more importantly, our rooftop bees that create it. Each year, a single hive can produce around 60 lbs (27kg) or more of Honey and around 25 lbs (11kg) of surplus. The surplus the bees don't need is taken to our kitchens and also available for our guests to purchase. 

All profits from the sale of our 2024 harvest will go to The Bee Friendly Trust to support their work in creating habitats for honeybees and other pollinators to thrive.

Our chefs eagerly await the new harvest and have prepared some exciting dishes and cocktails for our guests to enjoy throughout September.

In Caxton Restaurant, there's a delicious vegetarian dish of ‘Honey and miso-glazed sweet potato steak with maple-roasted sprouts and sheep Rustler cheese’. Those with a sweet tooth can indulge in a ‘Honey syrup-soaked rum baba, Chantilly cream, honey tuile, or freeze-dried raspberry’.

In Caxton Bar and on the Terrace, guests can sip on unique Honey Month cocktails made with St. Ermin's London Dry Gin and St. Ermin's Spiced Rum, infused with Honey produced on our rooftop hives.
