Bees & Kitchen Garden

St. Ermin’s’ roofs are literally alive with activity, bees producing honey and a kitchen garden providing fresh produce.


Our Bee Terrace on the third-floor roof is home to gentle Buckfast bees, which guests can observe safely from behind glass. Just beyond, our rooftop kitchen garden is bursting with fresh fruit and vegetables—much of which, like our honey, makes its way straight to our kitchens.

The garden isn’t just a source of seasonal produce—it’s also a peaceful breakout space enjoyed daily by both our kitchen team and our bees, who share a love of foraging.
From the rooftops of London to the wilds of Exmoor, our bees thrive in two distinct but connected environments—urban and rural, both rooted in purpose.

In London, the third-floor Bee Terrace offers a vital sanctuary for pollinators, with hives of gentle Buckfast bees and a dedicated Bee & Bee Hotel for solitary species. Guests can view the terrace from the glass walkway for a closer look at our urban colony in action.

In Exmoor, our out-apiary provides a pesticide-free haven where bees forage freely across wildflower meadows and ancient woodlands.

Though worlds apart, both sites share a single mission: to protect pollinators and support the ecosystems we all rely on.

Our rooftop has been transformed into a fertile space, where tomatoes, squash, pumpkin, spring onions, French beans, potatoes, olives, clementines, apples, plums, raspberries and blackberries are being cultivated in specially designed beds and pots. Alongside this abundance of fresh produce, there is an extensive herb garden and a greenhouse.

Green spaces are rare on any London property. We protect and enhance our property's biodiversity by preserving every green space, planting native vegetation, and creating habitats for local wildlife. With the help of our Gardeners Calistoga Growers we have invested huge time and effort planting to help our rooftop hives and all pollinators flourish. We’ve introduced bee friendly plants on every possible space.
